Ingredients
- 1 1/2 cup flour
- 1 1/2 cup ground flax seed
- 3/4 cup brown sugar
- 1 Tbsp. baking powder
- 3/4 tsp. nutmeg
- 1 1/2 tsp. cinnamon
- 2 cups milk
- 1 egg 1/2 to 1 cup dried fruit (raisins, cranberries, cherries, blueberries, dates, prunes, etc.)
Directions
- Preheat oven to 350 degrees. Line muffin pans with paper liners, or spray with oil.
- Mix first 6 ingredients (all the dry ingredients) together. Add milk and egg, and stir to blend. Fold in dried fruit.
- Fill muffin cups 3/4 full. Bake 25-30 minutes.
