Broccoli soup

Ingredients

  • 6 T butter
  • 5 T flour
  • 3 c broth
  • 2-3 c cream
  • 8 ounces Parmesan
  • one head broccoli
  • salt, pepper and other spices to taste

Directions

  1. Make a roux: Melt butter in a saucepan on medium heat. Whisk in the flour and continue whisking and cook for 3 minutes or so. You may need to turn it down so it doesn’t burn.

  2. Whisk in the broth and cream, and keep stirring as it thickens.

  3. Stir in a handful of the cheese, and then the broccoli.

  4. Add other seasoning and heat through.
