Honey Ginger Glazed Chicken

Ingredients

  • 2 Tbsp. honey
  • 1 Tbsp. Dijon mustard
  • 2 tsp. toasted sesame oil, divided
  • 1 Tbsp. chopped fresh ginger or 1 tsp. ground
  • 3/4 lb. chicken cutlets or breasts
  • Salt and freshly ground black pepper

Directions

  1. Combine the honey, mustard, 1 tsp. toasted sesame oil and ginger in a small bowl. Remove visible fat from chicken.
  2. heat the remaining sesame oil in a medium-size skillet over medium-high heat. Add the chicken and sauté 2 minutes for cutlets; 5 minutes for breasts. Turn and sauté 2 to 5 minutes more, or until internal temperature reaches 165 degrees. Sprinkle with salt and pepper to taste. Remove skillet from the heat and pour the sauce over the chicken. Cover the skillet with a lid and let sit several minutes while preparing the side dish.
