Ingredients
- 2 cups milk
- 2 tsp. baking powder
- 2 eggs, lightly beaten
- 1/3 cup sugar
- 1 tsp. vanilla
- dash of salt
- 1/2 stick butter
- 1 1/2 cups flour
- 1/2 cup mini chocolate chips, optional
- Fruit sauce:
- 1 pint raspberries, fresh or frozen
- 1 pint strawberries, fresh or frozen
- dash of salt
- 1 Tbsp. honey
Directions
- Melt the butter in a large bowl, add milk, baking powder, eggs, sugar, vanilla and a dash salt, mixing well with wire whisk.
- Add flour to make desired consistency; whisking just until flour is incorporated.
- For a fun presentation, pour the pancake mixture into a plastic squeeze bottle and then squeeze the batter in your skillet in the shape of a heart (do the outline first, wait a couple minutes, then do the inside of the heart), cooking until pancakes are lightly browned. Serve with fruit sauce for pancakes below and sprinkle a few mini chocolate chips on top, if desired.
