Feta Chicken and Pasta

Ingredients
- 2 cups cooked chicken, shredded
- 2 cups cooked Farfalle (bowtie) pasta
- 1 bundle fresh spinach, washed with stems
- removed
- 1 tsp. olive oil
- 1 tsp. garlic, minced
- 1/2 cup chicken broth or stock
- 4 oz. feta cheese
- 4 oz. light cream cheese, cut in small pieces
- salt and pepper to taste
Directions
- Heat olive oil in a large skillet or sauté pan. Add garlic, cooking for 2 minutes on medium low heat.
- Add spinach to pan, cook until wilted. Add chicken, pasta and broth and continue cooking.
- When all ingredients are warm, stir in the feta and cream cheese, mixing until melted, add salt and pepper to taste. If needed, thin with additional chicken broth or milk.
