Ingredients
- 2 1/2 cup sugar
- 1 tsp. ginger
- 1 tsp. cardamom
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/4 tsp. white pepper
- 1 cup butter, softened
- 2 eggs
- 2 tsp. vanilla
- 2 1/4 cup all-purpose flour
- 1/2 cup baking cocoa
- 2 tsp. cream of tartar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
Directions
- Preheat the oven to 350 degrees.
- In a large bowl, mix first 6 ingredients.
- Remove 1/2 cup to a shallow dish.
- Add butter to remaining sugar mixture, and beat until light and fluffy. Beat in eggs and vanilla.
- In another bowl, whisk flour, coca, cream of tartar, baking powder and salt, gradually beat into cream mixture.
- Shape dough into 1/2 inch balls. Roll in reserved sugar mixture. Place 2 inches apart on ungreased baking sheets. Flatten slightly with bottom of a glass.
- Bake 10-12 minutes or until edges are firm. Cool on a wire rack.
