Chicken Fajita Submarine Sandwiches

Ingredients
- 1 Tbsp. chili powder
- 1 1/2 tsp. ground cumin
- 1/2 tsp. ground oregano
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- Dash cayenne pepper
- 1 Tbsp. canola oil
- 1 lb. boneless skinless chicken breasts, cut
- into 3/4-inch cubes
- 1 medium sweet red pepper, cut into strips
- 1 medium onion, halved and sliced
- 1/2 cup water
- 1 loaf (1 lb.) French bread, halved lengthwise
- 1/3 cup mayonnaise
- 6 slices pepper jack cheese

In a bowl, mix the first six ingredients.

In a skillet, heat oil over medium heat. Add chicken, pepper and onion; cook and stir 10-12 minutes or until no longer pink and vegetables are tender.

Stir in water and seasoning mixture; cook and stir until thickened, about 10 minutes.

Spread mayonnaise over cut sides of bread. Cut crosswise into six pieces.
