Chocolate Shortbread Bars

Ingredients

  • 1 cup softened butter
  • 1 cup light brown sugar, lightly packed
  • 1 egg yolk
  • 1 tsp. vanilla extract
  • 1/2 tsp. orange zest
  • 1/4 tsp. almond extract
  • 2 cups flour
  • 1 cup chopped toasted almonds, divided use
  • 1 (12 oz.) pkg. semisweet chocolate chips

Directions

  1. Heat oven to 350 degrees.
  2. In a large bowl, cream together butter and brown sugar until light and fluffy, using an electric mixer. Beat egg yolk thoroughly.
  3. Add vanilla extract, orange zest and almond extract and beat 2 to 3 minutes, scraping sides of the bowl to ensure thorough mixing.
  4. Add flour and 1/2 cup almonds and mix on low until just combined.
  5. Spread dough into a 9×13 inch baking pan coated with cooking spray. Bake 25 minutes or until golden brown.
  6. Remove from oven; sprinkle top with chocolate chips.
  7. Return to oven for 30 seconds or until chocolate chips melt. Remove from oven; spread chocolate evenly over surface.
  8. Sprinkle with remaining 1/2 cup almonds. Cool completely before cutting and serving.
