Mashed Cauliflower with Parmesan

Ingredients
- 1 large head cauliflower(about 2 1/2 lbs.),
- broken into florets
- 1 cup shredded parmesan cheese, divided
- 1/3 cup heavy whipping cream
- 1 Tbsp. butter
- 1/2 tsp. pepper
- Minced fresh parsley, optional
Directions

Place 1 inch of water and cauliflower in a large saucepan; bring to a boil. Cook, covered, 10-12 minutes or until soft. Drain and mash.

Stir in 1/2 cup cheese, cream, butter and pepper. Sprinkle with remaining cheese and, if desired, parsley.
