Mom’s Spanish Rice

Ingredients
- 1 lb. lean ground beef (90% lean)
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 1 can (15 oz.) tomato sauce
- 1 can (141/2 oz.) no-salt-added diced
- tomatoes, drained
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- 2 2/3 cups cooked brown rice
Directions

In a large skillet, cook beef, onion and pepper over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain.

Stir in tomato sauce, tomatoes and seasonings; bring to a boil. Add rice; heat through, stirring occasionally.
