Moroccan Style Chicken

Ingredients

  • 1 four pound chicken
  • 6 cloves of garlic
  • 1 lemon, quartered
  • 1 tablespoon olive oil
  • 1/2 medium onion, cut into thick slices
  • FOR THE RUB:
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoons coriander
  • 1 teaspoons cumin
  • 1 teaspoons black pepper
  • 1/2 teaspoons garlic powder

Directions

  1. In a small bowl, combine all the seasonings for the rub.

  2. Remove any excess fat from the mail cavity of the chicken.

  3. Rinse chicken inside and out.

  4. Pat dry.

  5. Rub the chicken with one piece of the cut lemon.

  6. Sprinkle about 1/3 of the rub into the cavity.

  7. Place garlic cloves and lemon quarters inside.

  8. Rub the outside of the chicken with olive oil then seasoning mix.

  9. Place onion slices in the bottom of the dutch oven.

  10. Place the chicken on top of the onion slices.

  11. Cook at 350 degrees (9 coals down and 15 up) for 1 1/2 to 1 3/4 hours.

  12. Remove chicken from dutch oven.

  13. Let it rest for 10 minutes before serving.
