multi-Grain Crunch Salad

Ingredients

  • 1 bag Minute Multi-Grain medley
  • 1 cup vegetable broth
  • 1 cup cooked chicken breast, diced
  • 1/3 cup celery, sliced
  • 1/3 cup carrot, diced
  • 1/3 cup red bell pepper, sliced
  • 1/3 cup citrus vinaigrette
  • Lettuce leaves

Directions

  1. Prepare Multi-Grain Medley according to package directions, substituting broth for waater. Cool. In a medium bowl, combine chicken, celery, carrot, bell pepper and vinaigrette. Mix well. Fold in Multi-Grain medley.
  2. Serve on lettuce leaves.
