multi-Grain Crunch Salad

Ingredients
- 1 bag Minute Multi-Grain medley
- 1 cup vegetable broth
- 1 cup cooked chicken breast, diced
- 1/3 cup celery, sliced
- 1/3 cup carrot, diced
- 1/3 cup red bell pepper, sliced
- 1/3 cup citrus vinaigrette
- Lettuce leaves
Directions
- Prepare Multi-Grain Medley according to package directions, substituting broth for waater. Cool. In a medium bowl, combine chicken, celery, carrot, bell pepper and vinaigrette. Mix well. Fold in Multi-Grain medley.
- Serve on lettuce leaves.
