Chicken and Multi-Grain Stir Fry

Ingredients

  • 1 bag Minute Multi-Grain medley
  • 1 cup vegetable broth
  • 1 Tbsp. sesame oil, divided
  • 2 eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1/2 cup red onion, sliced thin
  • 2 cups cooked rotisserie chicken, shredded
  • 2 cups frozen stir-fry style vegetables, thawed
  • Soy sauce, optional

Directions

  1. Prepare Multi-Grain medley according to package directions, substituting broth for water. In a medium wok or skillet, heat 1/2 Tbsp. sesame oil over medium-high heat. Quickly soft scramble egg. Remove and reserve. Add remaining oil to wok/skillet and heat. Add garlic and onion and stir-fry for 2 minutes, or until heated through. Fold in Multi-Grain medley. Serve with soy sauce., if desired.
