Cypress Knees

great for camping dish. Just bake potatoes ahead, and wrap in foil to take along and finish on the camp fire in your iron skillet.

Serves 6 people

Ingredients

  • 4-6 potatoes
  • 1/4 lb. bacon
  • 3 Tbsp. melted butter
  • Cajun or all-purpose seasoning
  • Cheddar cheese, onion and sour cream

Directions

  1. bake potatoes in oven or microwave until almost done. Fry bacon in iron skillet; remove and drain on paper towel. keep drippings in skillet. Cut potatoes in half (not lengthwise) and stand in drippings. Allow to fry until brown on bottom. Remove from skillet; serve topped with melted butter and seasonings. Garnish with crumbled bacon, cheddar cheese diced onion and/or sour cream.
