Ingredients
- 4 cups cold leftover mashed potatoes
- 1/4 cup all-purpose flour
- 2 Tbsp. each chopped green onions and red
- bell peppers
- 1/2 cup grated cheddar or parmesan cheese
- 1 egg, lightly beaten
Directions
- Coat waffle iron with cooking spray. Preheat according to manufacturer’s directions. Combine potatoes and remaining ingredients. Mix well. Spoon 1/4 cup mixture onto center of waffle iron and cook until golden brown. Repeat with remaining mixture.
