Zesty Chicken Alfredo

Ingredients

  • 2 tsp. grated lemon zest
  • 1 tsp. black pepper
  • 1 lb. boneless, skinless chicken breast halves
  • 2 Tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • 1 (16 oz.) jar Healthy Choice Four-Cheese
  • Alfredo or mushroom Alfredo sauce
  • 4 cups cooked rotini pasta
  • 1 Tbsp. chopped parsley

Directions

  1. Rub equal amounts of lemon zest and pepper into each side of chicken breast.
  2. In a large non-stick skillet sprayed with cooking spray, sauté chicken 4 to 5 minutes per side or until no longer pink in middle. Remove chicken from skillet and keep warm.
  3. Add lemon juice, mustard and alfredo sauce to skillet, stirring to mix well and heat thoroughly.
  4. Serve sauce over cooked pasta and chicken; sprinkle with parsley.
