Zesty Chicken Alfredo

Ingredients
- 2 tsp. grated lemon zest
- 1 tsp. black pepper
- 1 lb. boneless, skinless chicken breast halves
- 2 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- 1 (16 oz.) jar Healthy Choice Four-Cheese
- Alfredo or mushroom Alfredo sauce
- 4 cups cooked rotini pasta
- 1 Tbsp. chopped parsley
Directions
- Rub equal amounts of lemon zest and pepper into each side of chicken breast.
- In a large non-stick skillet sprayed with cooking spray, sauté chicken 4 to 5 minutes per side or until no longer pink in middle. Remove chicken from skillet and keep warm.
- Add lemon juice, mustard and alfredo sauce to skillet, stirring to mix well and heat thoroughly.
- Serve sauce over cooked pasta and chicken; sprinkle with parsley.
