Oatmeal Muffins

Ingredients

  • 1 cup buttermilk
  • 1 cup rolled oats
  • 1/3 cup shortening or butter, melted
  • 1/2 cup brown sugar
  • 1 egg, beaten
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt

Directions

  1. In a medium bowl, combine the buttermilk and oats; soak 1 hour.
  2. Heat oven to 400 degrees. Grease the wells of 12 standard muffin cups.
  3. In a separate bowl, combine the melted shortening, brown sugar and egg.
  4. In a third bowl, sift together the flour, baking soda, baking powder and salt.
  5. Combine the soaked oats, egg mixture and flour mixture, stirring until just combine. Fill muffin cups two-thirds full with batter.
  6. Bake 20 to 25 minutes.
