Oatmeal Muffins

Ingredients
- 1 cup buttermilk
- 1 cup rolled oats
- 1/3 cup shortening or butter, melted
- 1/2 cup brown sugar
- 1 egg, beaten
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
Directions
- In a medium bowl, combine the buttermilk and oats; soak 1 hour.
- Heat oven to 400 degrees. Grease the wells of 12 standard muffin cups.
- In a separate bowl, combine the melted shortening, brown sugar and egg.
- In a third bowl, sift together the flour, baking soda, baking powder and salt.
- Combine the soaked oats, egg mixture and flour mixture, stirring until just combine. Fill muffin cups two-thirds full with batter.
- Bake 20 to 25 minutes.
