Scalloped Potatoes with Ham

Ingredients
- 1 medium onion, chopped
- 1 Tbsp. vegetable oil
- 3 cloves garlic, finely chopped
- 2 sweet potatoes, peeled and cut into
- 1/4-inch thick slices
- 1/2 cup all-purpose flour
- 1 tsp. salt
- 1/4 tsp. ground black pepper
- 2 cups chopped cooked ham
- 2 cups shredded Gruyere cheese
- 1 3/4 cups whipped cream
- 2 Tbsp. whipping cream
- 2 Tbsp. butter, cut into pieces
Directions
- Sauté onion in oil over medium-high heat for 5 minutes or until tender. Add garlic; cook 30 seconds. Remove from heat and set aside.
- Place potatoes in a large bowl.
- Heat oven to 400 degrees.
- Combine the flour, salt and pepper. Sprinkle flour mixture over the potatoes and toss gently to coat.
- Arrange half the potatoes in a greased 9 x13 inch baking dish or 3-quart gratin dish. Top with onion, ham and half the cheese.
- Arrange the remaining potatoes over the cheese. Pour cream over potatoes and dot with butter.
- Cover with aluminum foil and bake 50 minutes. Remove foil, sprinkle with remaining cheese and bake 20 minutes more or until cheese is melted and potatoes are tender. Let stand 10 minutes before serving.
