Ingredients
- 2 tsp. olive oil
- 3 oz. Canadian bacon, julienned (1/2 cup)
- 1 1/2 lbs. zucchini, sliced thin
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 2 tsp. minced garlic
- 1/4 tsp. grated lemon peel
- 1 lb. spaghetti, cooked (reserve 1/4 cup cooking water)
- 1 Tbsp. fresh lemon juice
- 1/2 cup julienned basil
Directions
- Heat oil in a large skillet over high heat.
- Add bacon and cook, stirring, 2 minutes.
- Add zucchini, salt and pepper; cook, stirring, just until tender-crisp, 5 minutes.
- Stir in garlic; cook 1 minute.
- Toss with lemon peel, hot spaghetti, reserved water, lemon juice and basil.
