No Brainer Egg Roll-up

Ingredients

  • for each serving:
  • 1 egg
  • 1 tsp. water or milk
  • 1/4 tsp. Italian seasoning
  • Pinch salt
  • Freshly ground pepper
  • 1/4 cup (about 1 small handful) baby kale
  • or baby spinach
  • 2 Tbsp. shredded Italian blend cheese
  • 1 Tbsp. mild Giardiniera or to taste (see note)
  • 1 (8-inch flour tortilla, warmed

Directions

  1. Combine egg, water, seasoning, salt and pepper to taste in a small bowl; lightly beat with a fork. Pour into a 7 to 8-inch microwave-safe saucer that has been coated with nonstick cooking spray. Carefully place in microwave, cook on high 1 minute.
  2. Remove saucer; egg won’t be fully set in the middle and that’s OK.
  3. Distribute the kale, cheese and Giardiniera
  4. (in that order) over eggs.

  5. Return to microwave; cook 1 minute more.
  6. Remove egg patty from saucer with a spatula; place on a flour tortilla. Roll up; serve.
  7. Note: Giardiniera is an Italian-American relish of pickled vegetables. Look for it with the pickles. If you can’t find it, substitute your favorite pickled vegetable.
