Fresh Apple Cake

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups sugar
  • 1 cup canola or vegetable oil
  • 2 eggs, beaten
  • 2 tsp. vanilla extract
  • 2 cups chopped raw apples, unpeeled
  • 1 cup raisins, soaked
  • 1 cup chopped nuts

Directions

  1. Heat oven to 350 degrees. Generously grease an 11x 13 inch baking dish or large Bundt cake pan.
  2. In a mixing bowl, combine the flour, baking soda and salt.
  3. In a separate bowl, combine the sugar vegetable oil, eggs and vanilla and mix well. Stir in the flour mixture and mix thoroughly. Add the apples, raisins and nuts.
  4. The batter will be very stiff.
  5. Transfer batter to prepared pan. Bake 45 minutes to 1 hour and 10 minutes (depending on type of pan).
