Million Dollar Cake

Ingredients

  • 1 (18 1/4 oz.) pkg. yellow cake mix
  • 3 eggs
  • 1/3 cup oil
  • 1 1/3 cup water
  • 8 oz. cream cheese
  • 1 (3 1/2 oz.) pkg. vanilla pudding mix
  • 1 1/2 cups confectioners' sugar
  • 1 (2o oz.) can crushed pineapple in juice
  • 2 (8 oz.) cans mandarin oranges, drained
  • 1 (8 oz.) pkg. cool whip, thawed

Directions

  1. Mix and bake cake per package directions. For 2 (8 or 9 inch) round layers. Let layers cool, then split to make 4 layers.
  2. In a large bowl, whip cream cheese until soft, then gradually add powdered sugar. Stir in pineapple with juice and drained mandarin oranges, save 5 or 6 slices to garnish cake Mix in dry pudding mix. Fold in cool whip.
  3. Place one cake layer on cake plate cut side up; spread with frosting. Place another layer cut side down on top of the first one, and top with frosting.
  4. Repeat until all layers are used, spreading remaining frosting over top and sides of cake. Decorate with reserved orange slices.
  5. Refrigerate overnight before serving.
