Ingredients
- 1 (18 1/4 oz.) pkg. yellow cake mix
- 3 eggs
- 1/3 cup oil
- 1 1/3 cup water
- 8 oz. cream cheese
- 1 (3 1/2 oz.) pkg. vanilla pudding mix
- 1 1/2 cups confectioners' sugar
- 1 (2o oz.) can crushed pineapple in juice
- 2 (8 oz.) cans mandarin oranges, drained
- 1 (8 oz.) pkg. cool whip, thawed
Directions
- Mix and bake cake per package directions. For 2 (8 or 9 inch) round layers. Let layers cool, then split to make 4 layers.
- In a large bowl, whip cream cheese until soft, then gradually add powdered sugar. Stir in pineapple with juice and drained mandarin oranges, save 5 or 6 slices to garnish cake Mix in dry pudding mix. Fold in cool whip.
- Place one cake layer on cake plate cut side up; spread with frosting. Place another layer cut side down on top of the first one, and top with frosting.
- Repeat until all layers are used, spreading remaining frosting over top and sides of cake. Decorate with reserved orange slices.
- Refrigerate overnight before serving.
