Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 1/2 tsp. vanilla extract
- 2 eggs
- 1 1/2 cups unsifted cake flour
- 1 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/3 cup milk
- 1 box (6.5oz.) white fluffy frosting mix
- 1/4 tsp. almond extract
- Red Food Coloring
- 2 Tbsp. chopped maraschino cherries
Directions
- Cream butter, gradually add sugar and beat until light and fluffy. Add vanilla, then eggs one at a time, beating well after each.
- Mix next 3 ingredients and add alternately with milk to creamed mixture, beating after each addition until smooth.
- Half-fill 16 greased cupcake sections with batter. Bake in preheated 375 degree oven about 20 minutes.
- Cool slightly, then remove to racks to cool completely.
- prepare frosting as directed on label, adding almond extract. Tint a delicate pink with a few drops coloring. Fold in chopped cherries and spread on cakes.
