Velvet Crumb Cake-in-a Cup

Ingredients
- 1 Tbsp. soft butter
- 1 Tbsp. granulated sugar
- 3 drops vanilla extract
- 3 Tbsp. baking mix, such as Bisquick
- 2 Tbsp. milk
- Optional topping:
- 2 Tsp. soft butter
- 1 Tbsp. pecans
- 2 tsp. brown sugar
- 1 tsp. flaked coconut
Directions
- In a microwave-safe coffee cup or 4-inch ramekin, add butter, sugar and vanilla. Mix well. Add baking mix and milk and stir until baking mix is completely absorbed.
- Microwave on high for about 1 minute. (Time may vary according to microwave strength.) Turn cake from cup onto a microwave-safe plate or leave in ramekin.
- To make topping: In a very small bowl, mix butter, chopped pecans, brown sugar and coconut. Spread mixture over cake and place cake under oven broiler about 30 seconds or until mixture is bubbly. Watch carefully so it does not burn. Serve warm.
