Oatmeal Raisin Refrigerator Cookies

Ingredients

  • 1 cup packed brown sugar
  • 1 cup sugar
  • 1 cup unsalted butter or margarine
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 cups Quick oats
  • 1 cup Raisins

Directions

  1. Combine sugars, butter and eggs in large bowl. Stir in flour, baking soda, baking powder, and salt. Add oats and raisins blending well.
  2. Divide cookie dough into 2 halves; shape each into a 2 inch wide roll on a sheet of wax paper or cling-film. Wrap and refrigerate for 2 hours.
  3. Preheat oven to 375 degrees. Unwrap dough, cut into 1/3 inch slices and put on ungreased or parchment paper lined cookie sheets; cookies should be 2 inches apart.
  4. Bake for 10 to 12 minutes until golden brown. Cool cookies on wire rack.
  5. about 5-6 dozen cookies
