Ingredients
- 1 cup packed brown sugar
- 1 cup sugar
- 1 cup unsalted butter or margarine
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 2 cups Quick oats
- 1 cup Raisins
Directions
- Combine sugars, butter and eggs in large bowl. Stir in flour, baking soda, baking powder, and salt. Add oats and raisins blending well.
- Divide cookie dough into 2 halves; shape each into a 2 inch wide roll on a sheet of wax paper or cling-film. Wrap and refrigerate for 2 hours.
- Preheat oven to 375 degrees. Unwrap dough, cut into 1/3 inch slices and put on ungreased or parchment paper lined cookie sheets; cookies should be 2 inches apart.
- Bake for 10 to 12 minutes until golden brown. Cool cookies on wire rack.
