Patricia’s Chocolate Pie

Ingredients
- 1 cup granulated sugar
- 1/4 cup plus 2 Tbsp. all-purpose flour
- 1/4 cup plus 2 Tbsp. cocoa
- 1/4 tsp. salt
- 2 cups milk
- 3 eggs, separated
- 1 Tbsp. butter
- 1 1/2 tsp. vanilla extract, divided use
- 1 homemade or refrigerated 9-inch pie crust, baked
- 1/4 tsp. cream of tartar
Directions
- In a large saucepan, combine sugar, flour, coca and salt; gradually stir in milk, cooking and stirring over medium heat until mixture boils and thickens. Cook 2 minutes more. Remove from heat.
- Beat egg yolks slightly in a medium bowl. Stir small amount of hot mixture into the egg yolks, then stir all of the egg yolk mixture into the hot milk mixture.
- Return to heat and cook 2 minutes more, stirring constantly. Remove from heat, stir in butter and 1 tsp. of the vanilla. press a sheet of plastic film from forming. let cool to room temperature. Pour into prepared pie crust.
- For the meringue: Beat the egg whites with 1/4 tsp. whites with 1/4 tsp. cream of tartar and 1/2 tsp. vanilla extract to soft peaks. Gradually add 6 tablespoons of sugar, beating until stiff peaks form and sugar is dissolved. Spread or mound meringue over pie, sealing edges at crust.
- Bake at 350 degrees for 12 minutes or until meringue is golden.
