Speedy Salmon Cakes

Ingredients

  • 1 14 oz can salmon, drained, bones and skin removed
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 scallions, white part only, thinly sliced
  • salt and pepper
  • 1/2 cup flour
  • 2 tbsp unsalted butter
  • tartar sauce

Directions

  1. In a large bowl, combine salmon, bread crumbs, egg and scallions; season with salt and pepper. Stir with a fork until the mixture just holds together.

  2. Using wet hands, form salmon mixture into 4 equal-size patties measuring about 3 inches in diameter. Place flour on a plate and dip patties in flour to coat entire surface.

  3. In a large skillet, heat butter over medium-high heat. When bubbles start to subside, add salmon cakes and cook until lightly browned, 3 to 5 minutes per side. Serve warm, with a dollop of tartar sauce. Serve with green beans and creamed corn, if desired.
