Lower-Carb Ginger Molasses Cookies

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 Tbsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. ground cloves
  • 1/2 butter
  • 1/2 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1 egg, lightly beaten
  • 1/4 cup molasses
  • 2 Tbsp. oiling water
  • 1 tsp. baking soda
  • 1/4 cup crystalized ginger, very finely
  • chopped.

Directions

  1. Preheat oven to 350 degrees. In a medium bowl, stir together flour, cinnamon, ground ginger, nutmeg, and cloves; set aside.
  2. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugars, beat until light and fluffy, scraping sides of bowl occasionally in a small bowl combine egg and molasses. Add egg mixture to butter mixture, beating until combined.
  3. In another bowl, combine the boiling water and baking soda. Add half of the flour mixture and all of the baking soda mixture to butter mixture, beating on low speed after each addition. Beat in remaining flour mixture. Stir in crystalized ginger.
  4. Drop dough by rounded tablespoons onto ungreased cookie sheets. Sprinkle each mound of dough with scant 1/8 tsp. sanding sugar.
  5. bake 9 to 11 minutes or until bottoms are lightly browned. Transfer to a wire rack. Cool.
