Loaded Granola Cookies

Ingredients

  • 1 cup unsalted butter, room temperature
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 2 cups whole white wheat flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup coconut
  • 1 cup oats
  • 1 cup crispy brown rice cereal
  • 1 cup golden raisins or dried cranberries
  • 1 cup dark chocolate chunks
  • 1 cup chopped pecans
  • 1/3 cup wheat germ

Directions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl beat butter and sugars. Add vanilla and eggs and blend well.dd all remaining ingredients and stir just to combine.
  3. Scoop and drop by the tablespoon onto a cookie sheet. Bake for about 10 minutes or until edges are golden.
