Fresh Carrot Salad

Ingredients

  • 2 Tbsp. extra-virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 clove garlic, minced
  • 3/4 tsp. ground coriander
  • 1/8 tsp. cinnamon
  • 1/2 tsp. smoked paprika
  • 1/2 fresh red jalapeno or Fresno pepper, seeded and very thinly sliced
  • 1/2 tsp. coarse salt
  • 8 oz. grated carrots
  • 1/2 cup chopped cilantro

Directions

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, coriander, cinnamon, paprika, jalapeno and salt.
  2. Toss with carrots and cilantro. Add cilantro just before serving.
