Country Fried Potatoes

Good ’ole down home potatoes.

Ingredients

  • 2-3 potatoes, peeled and sliced thin
  • 1/4 cup oil (vegetable oil or bacon grease)
  • 1/2 large onion sliced into half circles
  • salt
  • pepper
  • water

Directions

  1. Peel, slice potatoes. Heat oil in skillet.

  2. Toss potatoes into hot oil, stiring to brown slightly. Toss in onions when potatoes are just starting to brown. Complete browning.

  3. Season with salt and pepper to taste.

  4. Pour about 1/2 to 2/3 cup water into skillet and place lid on skillet.

  5. Watch, stirring and adding water as necessary. You don’t want water in the potatoes to serve. Remove lid near the end and allow water to evaporate and potatoes to brown a little more.

  6. This whole process should take about 20 to 30 minutes.
