Festive Fruitcake II

Ingredients

  • 2 eggs
  • 2 cups water
  • 1 (16oz.) pkg. date bread mix
  • 2 tsp. cinnamon
  • 1 Tbsp. cocoa
  • 1/4 cup brandy
  • 2 cups chopped pecans
  • 2 cups raisin3 (8oz.) pkg. mixed candied fruit (4 1/2 cups total)

Directions

  1. Preheat oven to 350 degrees F. Grease and flour bottom and sides of a 10 inch tube pan or Bundt pan.

  2. 2 In a large bowl, combine eggs and water. Stir in read mix, chopped pecans, raisins and candied fruit. Pour into prepared pan.

  3. Bake for 75 to 85 minutes, or until toothpick inserted in center comes out clean.

  4. Cool in pan 30 minutes. Loosen edges and remove from pan. Cool completely. Wrap in plastic wrap or foil and store in refrigerator.
