Sugar Free Low Carb Egg Nog

Ingredients

  • 1 cup fat free half and half
  • 1 pkg. ( 1 oz.) sugar-sugar free Jell-O instant vanilla pudding powder
  • 5 cups 2% milk
  • 1/2 cup splenda granular
  • 3/4 tsp. fresh grated nutmeg
  • 14 tsp. cinnamon
  • 2 tsp. brandy or rum extract
  • 1 tsp. vanilla extract

Directions

  1. Whisk together the half-and-half and pudding powder until smooth- this will be very thick.

  2. Slowly whisk in milk until smooth.

  3. Whisk in Splenda, nutmeg, cinnamon and extracts.

  4. Allow to chill for at least 2 hours. Serve with whipped cream and a sprinkling of freshly grated nutmeg.

  5. If you would like to make it richer, you can add a half a cup of egg substitute or 2 eggs.
