Banana Rice Pudding

Ingredients
- 4 ripe bananas
- 1 Tbsp. lemon juice
- 3 cups cooked white rice
- 3 large eggs, beaten
- 1 tsp. salt
- 1 cup sugar
- 2 cups whole milk
- 2 Tbsp. Smart Balance or margarine (softened)
- 1 tsp. vanilla
- Dash of nutmeg and/or cinnamon (optional)
Directions
- Preheat oven to 325 degrees F.
- Mash bananas and lemon juice together, ass rice and stir well, and pour into a 9×9×4 inch deep baking dish.
- In a bowl beat eggs, salt, sugar, milk, Smart Balance and vanilla. Pour into the baking dish with banana rice mixture and combine. Sprinkle spices on top.
- Place the baking dish in a larger pan, place in the oven, and fill the bottom pan with eater one inch from the top.
- Bake for 1 hour or till fully set. When done, allow to cool on wire rack, and then refrigerate until completely cold. Garnish with whipped cream.
