Banana Rice Pudding

Ingredients

  • 4 ripe bananas
  • 1 Tbsp. lemon juice
  • 3 cups cooked white rice
  • 3 large eggs, beaten
  • 1 tsp. salt
  • 1 cup sugar
  • 2 cups whole milk
  • 2 Tbsp. Smart Balance or margarine (softened)
  • 1 tsp. vanilla
  • Dash of nutmeg and/or cinnamon (optional)

Directions

  1. Preheat oven to 325 degrees F.
  2. Mash bananas and lemon juice together, ass rice and stir well, and pour into a 9×9×4 inch deep baking dish.
  3. In a bowl beat eggs, salt, sugar, milk, Smart Balance and vanilla. Pour into the baking dish with banana rice mixture and combine. Sprinkle spices on top.
  4. Place the baking dish in a larger pan, place in the oven, and fill the bottom pan with eater one inch from the top.
  5. Bake for 1 hour or till fully set. When done, allow to cool on wire rack, and then refrigerate until completely cold. Garnish with whipped cream.
