Calas (Rice Fritters)

New Orleans sweet treat from the days of street vendors and the “Cala Women”.

Ingredients
- 6 Tbsp. flour (plain)
- 1/3 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1/8 tsp. nutmeg
- Pinch cinnamon
- 2 cups cooked rice
- 2 eggs
- Cooking oil
- Powdered sugar
Directions
- In a large pan, pour at least 1 inch of oil and heat up to 360 degrees.
- Mix together flour, sugar, baking powder, salt, vanilla and nutmeg.
- Beat eggs and rice together in a large bowl. Add dry ingredients to the rice and egg mixture. When thoroughly mixed, drop spoonfuls into hot oil. Fry until golden brown. Drain on paper towel.
- Sprinkle with powdered sugar and serve while hot.
