Broad beans with Pecorino and prosciutto

Ingredients

  • 175g frozen broad beans, thawed
  • 110g young Pecorino cheese, preferably not hard
  • 6 thin slices Italian dry-cured ham (prosciutto crudo)
  • 5 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp chopped fresh oregano
  • 2 tbsp chopped fresh parsley
  • pinch of dried chilli flakes

Directions

  1. Pop the thawed broad beans out of their skins into a large bowl.

  2. Cut the Pecorino into cubes and the ham into strips, add both to the beans and gently mix.

  3. Whisk the olive oil and lemon juice with the herbs and chilli flakes, if using. Season and pour over the bean mixture. Serve with crusty bread.
