Ingredients
- 1 lb. (2 cups) dried beans, picked over and soaked 6 to 12 hours
- 1 bay leaf
- 2 cloves garlic, mashed
- 1/2 onion, sliced
- 1 Tbsp. vegetable oil Or lard or 1 slice bacon, chopped
Directions
- Rinse the soaked beans and place them in a 6-quart or larger pressure cooker. Add 4 cups cold water, the bay leaf, garlic, onion and fat.
- Lock lid on pot, and bring cooker to high pressure over high heat. Once high pressure is achieved, reduce heat to as much as possible while still maintaining pressure and cook for 5 to 20 minutes depending on type of beans (black beans will take 5-7 minutes, Great Northern Beans will take 6-8 minutes, pinto and kidney beans will take 8-10 minutes, chickpeas take about 13-20 minutes)
- Remove from heat and let pressure return to normal naturally.
