Ranch Skillet Supper

Serves 4 people

Ingredients

  • 1 Tbsp. canola oil
  • 1 lb. turkey breast
  • 1 ( 8oz.) pkg. seasoned rice and black beans
  • 1 (10 oz.) can diced tomatoes with green chilies
  • 2 cups frozen corn
  • 2 3/4 cups water
  • chopped fresh cilantro
  • 1cup shredded cheddar cheese

Directions

  1. Heat the oil in a large skillet on medium-high.
  2. Add the turkey breast and cook 4 minutes or until no longer pink.
  3. Stir in seasoned rice and black beans, tomatoes with green chilies, corn and water.
  4. Bring to a boil; reduce heat, cover and simmer 20 minutes or until water is absorbed. Sprinkle with cilantro and shredded cheese.
