Carrot and Orange marmalade

Ingredients

  • 6 carrots
  • 3 oranges
  • 1 lemon
  • Sugar, about 4 cups

Directions

  1. Scrape carrots, dice and cook until tender in as little water as possible. Slice orange very thin and add juice and grated rind of lemon.
  2. Combine carrots and fruit, measure and add 2/3 as much sugar. Heat, stirring until sugar is dissolved.
  3. Cook rapidly until thick and clear. Pour into clean hot glasses and seal with paraffin.
  4. makes 6 (6oz.) glasses
