Christmas Brunch Jam

Ingredients

  • 3 cups fresh cranberries
  • 1 (20 oz.) can crushed pineapple, undrained
  • 1 cup peeled and diced cooking apple
  • 3 cups sugar
  • 1 1/2 cup water
  • 1 3/4 tsp. grated lemon rind
  • 2 Tbsp. lemon juice

Directions

  1. Combine all ingredients in a Dutch oven. Cook, uncovered, over medium -low heat, stirring frequently, until mixture registers 221 degrees on a candy thermometer (this will take about 1 1/2 hours).
  2. Spoon cranberry mixture into hot sterilized jars, leaving 1/4 inch head space; cover at once with metal lids, and screw bands tight. Process in boiling water bath 15 minutes.
