Thai Coconut Curry

Can be made with fresh prawns or chicken strips
Prep time: 10 minutes
Cook time: 15 minutes
Serves 4 people

Ingredients
- 1 red onion, sliced
- 2 T Gourmet Garden fresh thai blend
- 200 ml lite coconut milk
- 400 g raw prawns (or boneless chicken strips)
- 3 C frozen stir fry vegetable mix
- cooked rice or noodles, to serve
Directions

Stir fry onion, add thai blend and cook 1 minute.

Add coconut milk, and prawns and cook for 1 minute, or with chicken strips cook for 5 minutes.

Add vegetables and cook a further 3-5 minutes.

Serve over cooked rice or noodles.
