Thai Coconut Curry

Can be made with fresh prawns or chicken strips

Prep time: 10 minutes
Cook time: 15 minutes
Serves 4 people

Ingredients

  • 1 red onion, sliced
  • 2 T Gourmet Garden fresh thai blend
  • 200 ml lite coconut milk
  • 400 g raw prawns (or boneless chicken strips)
  • 3 C frozen stir fry vegetable mix
  • cooked rice or noodles, to serve

Directions

  1. Stir fry onion, add thai blend and cook 1 minute.

  2. Add coconut milk, and prawns and cook for 1 minute, or with chicken strips cook for 5 minutes.

  3. Add vegetables and cook a further 3-5 minutes.

  4. Serve over cooked rice or noodles.
