Damson Plum Jam

Ingredients

  • 1 quart damson plums
  • 1 cup water
  • about 2 cups sugar

Directions

  1. Wash plums, add water and cook until skins are tender. Remove stones. Measure fruit and add 2/3 cup sugar for each cup plums. Cook quickly until thick. Color should be bright red. Pour into clean hot jars and seal.
  2. makes 4 ( 8oz.) jars.

  3. Variations-Fruit may be cut from stones before cooking.

  4. Beach plums may be prepared in the same way.
