Ingredients
- 4 lb. fully ripened fresh peaches
- 1/4 cup fresh lemon juice
- 3 1/2 oz. pkg. of powdered pectin
- 6 cups mild flavored honey
Directions
- Wash, peel and remove pits from fresh peaches. Chop or coarsely grind peaches. Mix with lemon juice. measure prepared frit, packing down in cup. There should be 4 full cups.
- Place fruit and lemon juice in large 6 to 8 quart saucepan. Add pectin and mix well. Place over full heat. Bring to boil; stirring constantly. (Grease rim of saucepan well and mixture will not boil over.)
- Grease measuring cup. Measure honey. When fruit is boiling, stir and slowly pour in honey. Blend well. Continue stirring and return to a full rolling boil. that cannot be stirred out.
- Boil exactly four minutes. Remove from heart. Stir for five minutes to keep fruit form floating. Skim to remove foam. Pour into hot sterilized glasses leaving 1/4 inch headspace.
- Adjust lids, and process in boiling water bath 10 minutes.
