Fresh Peach Jam

Ingredients

  • 4 lb. fully ripened fresh peaches
  • 1/4 cup fresh lemon juice
  • 3 1/2 oz. pkg. of powdered pectin
  • 6 cups mild flavored honey

Directions

  1. Wash, peel and remove pits from fresh peaches. Chop or coarsely grind peaches. Mix with lemon juice. measure prepared frit, packing down in cup. There should be 4 full cups.
  2. Place fruit and lemon juice in large 6 to 8 quart saucepan. Add pectin and mix well. Place over full heat. Bring to boil; stirring constantly. (Grease rim of saucepan well and mixture will not boil over.)
  3. Grease measuring cup. Measure honey. When fruit is boiling, stir and slowly pour in honey. Blend well. Continue stirring and return to a full rolling boil. that cannot be stirred out.
  4. Boil exactly four minutes. Remove from heart. Stir for five minutes to keep fruit form floating. Skim to remove foam. Pour into hot sterilized glasses leaving 1/4 inch headspace.
  5. Adjust lids, and process in boiling water bath 10 minutes.
  6. makes 10 half-pint jars
