Jellied Rubarb

Serves 6 people

Ingredients

  • 1 1/2 lb. rhubarb, diced (4 1/2 cups)
  • Sugar
  • 1 envelope unflavored gelatin
  • 1/2 cup heavy cream
  • Grated rind of 1/2 orange

Directions

  1. Put rhubarb and 1 cup sugar in saucepan with 1/2 cup boiling water. Cover, bring slowing to boil and simmer 2 to 3 minutes, or until rhubarb is soft but still holds its shape (do not overcook). Drain syrup into bowl. Soften gelatin in 2 Tbsp. cold water, add to syrup and stir until dissolved.
  2. divide rhubarb among 4 to 6 serving dishes. Pour syrup over top and chill until firm.

  3. Whip cream, sweeten to taste and fold in orange rind. Serve on rhubarb.
