Lemon-Pink Jelly

Ingredients

  • 1 3/4 cups lemon-pink Hawaiian punch
  • 2 Tbsp. lemon juice
  • 3 1/2 cups sugar
  • Few drops red food coloring
  • 1/2 bottle liquid pectin (6 Tbsp.)

Directions

  1. Put first 3 ingredients in heavy saucepan and mix well. Add food coloring to tint desired shade of pink. Put over high heat and bring to a boil stirring. At once stir in pectin and bring to full rolling boil. Boil, hard stirring, 1 minute.
  2. Remove from heat and skim off foam. pour at once into hot sterilized jars to within 1/2 inch from top. Seal. Process in hot water bath for 5 minutes.
  3. makes about 4 (8oz.) glasses
