Mock Raspberry Jam AKA Green Tomato Jelly

Ingredients

  • 5 cups finely chopped green tomatoes
  • 4 cups granulated sugar
  • 2 (3 oz.) boxes raspberry Jell-O

Directions

  1. Place tomatoes in large saucepan. Add sugar and bring to a boil over medium heat; let cook for 15 minutes, stirring frequently. Skim foam from top and discard.
  2. Add Jell-O and stir well so the mixture doesn’t stick to the pan. Bring to a low boil and boil for 1 minute.
  3. Pour into sterilized jars and cover tightly. let cool before refrigerating. Keeps refrigerated for about 3 weeks or 1 year in the freezer.
