Mincemeat

Ingredients

  • 3 lb. lean beef
  • 1/2 lb. suet
  • 6 lb. sour apples
  • 3 lb. seeded raisins
  • 2 lb. seedless raisins
  • 1/2 lb. citron, minced
  • 1 nutmeg, grated
  • 2 lb. sugar
  • 2 cups cider vinegar
  • 2 cups molasses
  • 1 Tbsp. cloves
  • 1 tsp. cinnamon
  • 1 tsp. mace
  • 1 Tbsp. salt

Directions

  1. Cut meat in cubes, cover with water and simmer until tender. Cool. Drain and reserve stock.
  2. Force meat, suet and pared and cored apples through a food chopper.
  3. Add remaining ingredients plus 2 cups stock and simmer 1 hour, stirring frequently.
  4. Pour into sterilized jars, seal and keep in a cool place.
  5. makes 9 quarts
