Ingredients
- 3 lb. lean beef
- 1/2 lb. suet
- 6 lb. sour apples
- 3 lb. seeded raisins
- 2 lb. seedless raisins
- 1/2 lb. citron, minced
- 1 nutmeg, grated
- 2 lb. sugar
- 2 cups cider vinegar
- 2 cups molasses
- 1 Tbsp. cloves
- 1 tsp. cinnamon
- 1 tsp. mace
- 1 Tbsp. salt
Directions
- Cut meat in cubes, cover with water and simmer until tender. Cool. Drain and reserve stock.
- Force meat, suet and pared and cored apples through a food chopper.
- Add remaining ingredients plus 2 cups stock and simmer 1 hour, stirring frequently.
- Pour into sterilized jars, seal and keep in a cool place.
