Mustard- Peach Preserves

Ingredients

  • 1 Tbsp. olive oil
  • 1/2 medium-size sweet onion, finely chopped
  • 1 cup peach preserves
  • 3/4 cup chopped dried peaches
  • 3/4 cup coarse-grained Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Heat oil in a large nonstick skillet over medium heat. Add onion, and cook, stirring often, 5 to 6 minutes or until onions are golden brown. Remove from heat, and stir in preserves and next 4 ingredients. Cover and chill 1 hour or up to 1 week.
