Pork Chops a la Lela

Ingredients
- 1/2 cup panko bread crumbs
- 1 Tbsp. grated parmesan cheese
- 1 tsp. garlic salt
- 1 tsp. paprika
- 1/2 tsp. mustard powder
- 2 (1-inch thick) pork chops
- 2 Tbsp. olive oil
- 1 small onion, finely chopped
- 14 cup balsamic vinegar
- 1/4 cup dry white wine
- 2 Tbsp. capers
Directions
- Combine panko, cheese, garlic salt, paprika and mustard powder. Coat chops with mixture.
- Heat oil in skillet over medium-high heat. Cook chops, turning once, until cooked through. (Pork is safe to eat when it reaches an internal temperature of 145 degrees.) Remove to warm plate.
- Drain all but 2 Tbsp. of drippings from the pan. Add onion and sauté until tender. Add vinegar and wine, scraping up browned bits form the bottom of the pan. Bring to a boil and simmer until reduced by half. Add capers. Serve as a sauce over the pork.
