Rose Petal Jelly

this is surprisingly good, and pretty too.

Ingredients
- 1 cup rose petals , well packed
- 1/2 cup rose water or 1 tsp. rose extract
- 3/4 cup water
- 1 13 cup sugar
- 1 Tbsp. honey
- 1 tsp. lemon juice
Directions
- Pick tender rose petals until you have 1 well-packed cup. Cut into fine pieces and wash in a colander or large strainer.
- Place petals, rose water and water in a saucepan and simmer 5 minutes or until petals are soft.
- Strain petals and measure 1/2 cup of remaining liquid (add water if needed to reach 1/2 cup).
- Return liquid to saucepan. Add sugar and honey and bring to a rapid boil. Return petals to saucepan and reduce heat. Simmer very slowly for 20 minutes, stirring constantly, then add lemon juice and cook for 5 minutes more. Pour into heated jars and seal.

“we accidently overcooked this recipe once, and made a delicious discovery. The mixture had become too stiff to make jelly, so we dropped it by spoonfuls onto a greased cookie sheet and enjoyed Rose Petal Candy instead.
